Each and every pint of gelato and sorbetto sold in the United States is created by our team at our Flavor Foundry in Brunswick, Maine. Under Bruno’s training and supervision, our gelato creators use a small-batch, hand-packed process to create each flavor from scratch using our own recipes.

We use milk from Maine family farms, natural cane sugar, and premium fruits, nuts, chocolates, and confections. The Foundry produces one to four flavors each day, and depending on that day’s flavors, might be washing and hulling strawberries, chopping cookies, or cooking blueberries and sugar into a variegate.

When we seek to create new flavors, we taste-test recipe versions about a mile away, at our Flagship Store on Maine Street in Brunswick.

As an active kitchen and logistics center for our nationwide pint offerings, the Flavor Foundry is not open to drop-in visitors.
